Make

Ingredients

  • quinoa — 150 g (red, white and black mixed in the source)
  • vegetable stock — 200 ml
  • onion — 15 g (chopped)
  • green chilli — 5 g (chopped)
  • black mustard seeds — 1/2 tsp
  • turmeric powder — 1/2 tsp
  • almonds — 5 g
  • cashew nuts — 5 g
  • raisins — 5 g
  • curry leaves — 6-8
  • parsley — 5 g (chopped)
  • chives — 5 g (chopped)
  • olive oil — 10 ml
  • lemon — 1 (juice)
  • salt and pepper (to taste)

Method

  1. Bring the vegetable stock to a boil, take it off the heat and add the quinoa. Cover tightly and leave for 15-20 minutes, until the quinoa is soft.
  2. Heat the oil on high heat and add the mustard seeds. When they start to pop, add the turmeric, onion, green chilli, raisins, cashews, almonds and curry leaves.
  3. Lower the heat and saute until the onion is translucent and the cashews are lightly browned.
  4. Add the softened quinoa and mix it thoroughly with the spices.
  5. Season with salt, pepper and lemon juice and scatter over the parsley and chives.

Tips

  • From the same book (p. 27 PDF): rinsing quinoa under cold water while rubbing it gently removes leftover bitterness.
