Little Millet Lemonade
Soak overnight · Prep 10 min · Cook 20 min · Servings not given in the source
Make
Ingredients
- little millet — 50 g (washed and soaked overnight)
- water — 500 ml
- lemons — 3 (juiced)
- honey — 15 ml
- salt (a pinch)
- ice cubes (optional)
- fresh mint leaves (to garnish)
Method
- Drain the soaked millet and rinse it well under the tap.
- Bring the 500 ml of water to a boil in a large pan, add the millet and cook for 15 to 20 minutes until soft, stirring now and then so it does not stick.
- Take the pan off the heat and let it cool to room temperature.
- Pour it through a fine sieve or a muslin cloth into a jug, keeping the cooking water. The grains can go into another dish.
- Squeeze the lemons into the millet water, tasting as you go. Stir in the honey until it dissolves and add a pinch of salt.
- Serve over ice if you like, with mint leaves on top.
