Ingredients
- kodo millet — 175 g
- water — 300 ml
- oil — 30 g
- cumin seeds — 5 g
- onion — 1 (sliced)
- garlic — 2 cloves (minced)
- tomato — 1 (chopped)
- carrot — 1 (diced)
- green peas — 50 g
- coriander powder — 5 g
- garam masala — 5 g
- salt (to taste)
Method
- Rinse the kodo millet and leave it in water for 30 minutes.
- Heat the oil in a pan and add the cumin. Once it crackles, add the sliced onion and cook until golden brown.
- Add the garlic and give it a minute.
- Tip in the tomato, carrot and peas, then the coriander powder, garam masala and salt. Cook for about 5 minutes until the vegetables soften.
- Drain the millet, add it to the pan and stir it through the vegetables.
- Pour in the 300 ml of water and bring it to a boil. Turn the heat down, cover and cook for 15 to 20 minutes, until the millet is done and the water has gone. Serve hot with raita.
Tips
- General practice: leave the pulao covered off the heat for 5 minutes before fluffing it with a fork.
