Ingredients
- kodo millet — 1/4 cup
- milk — 4 cups
- ghee — 2 tbsp
- charoli (chironji) — 1 1/2 tbsp
- chopped dry fruits — 1-2 tbsp (pistachio, almond, cashew)
- sugar — 1/4 cup
- nutmeg powder (a large pinch)
- green cardamom powder — 1/4 tbsp
- blanched pistachios and saffron strands (to garnish)
Method
- Bring the milk to a boil in a deep heavy-bottomed pan and let it bubble for 3-4 minutes.
- In a small pan, warm 1 tbsp ghee and fry the charoli and chopped nuts for 1-2 minutes; lift them out.
- Add the rest of the ghee to the same pan and saute the kodo millet for 2-3 minutes.
- Tip the millet into the boiling milk and simmer for 10-12 minutes, stirring often.
- Add the sugar and cook until it dissolves, then add the nutmeg, cardamom and fried nuts and cook 1-2 minutes more.
- Serve garnished with pistachios and a few saffron strands.
Tips
- General practice: scrape the bottom of the pan as you stir so the milk does not catch.
